Five years on the lees and non-dosage, the Serenade 2015 Méthode Cap Classique is an extra dry, Brut Nature sparkling wine inspired by small production Champagne. A classic blend of 68% Chardonnay, 18% Pinot Noir and 14% Pinot Meunier all harvested from premium organic vineyards in the cool climate Elgin region.

The nose presents with Granny Smith apples, chamomile, oats, pistachio, with a hint of nectarines and sunflower seeds. Slight lemon zest pithiness, opening to a naturally fresh palate. Lively and taut with notes of aniseed and quince. The delicate, fine bead provides palate lift with a lasting mineral-saline mousse. Flavours of salty macadamia and hay round off the finish. Enjoyable young but will certainly develop with age.
Pair with seafood, salads and tapas style dishes.
